Best Ever Muffins

1 3/4 C. flour1 egg
2 1/2 t. baking powder1 C. milk Melt
2 T. sugar2 T. shortening or oil
3/4 t. salt 

Instructions

In mixing bowl put flour, baking powder, sugar and salt.
Make a well.
Combine egg and milk.
Add melted shortening (slightly cooled) or oil, to egg mixture.
Add all at once to dry ingredients.
Stir quickly, only until moistened.
Drop from a tablespoon onto greased muffin tin. Fill 2/3 full.
Bake at 400 degrees for 25 minutes.
Makes 1 doz.

Blueberry Muffins
Reduce milk to ½ C. and add ¾ C. fresh berries to dry ingredients.

Jelly muffins
Top each with 1 t. tart jelly before baking.

To add raisins, nuts or dates - use 3/4 C.

Sour milk muffins
Substitute 3/4 C. sour or buttermilk for milk. Add 1/4 t. soda, and reduce baking powder to 1 t.
