Calizone

1 package dry yeast1/4 C. spaghetti sauce
1/4 t. sugar1/4 C. diced mozzarella cheese
¾ C. luke warm water, 1-pound parmesan cheese
1-3/4 C. bread flour or unbleached flourMushrooms
1/2 t. saltOnions
Olive oilBlack olives

Instructions

Pizza Dough: Mix yeast, water and flour in bowl. Leave 10 minutes. Stir again. Add flour and salt. Mix until it forms a ball. It should be a little sticky. Turn out onto floured board, knead several times, or about 2 minutes, throwing it down hard, and flipping it over as you knead it. When smooth, lightly oil, and place in bowl to rise, free from drafts, until double in bulk. Cover with plastic wrap. Do not punch down.
Divide into as many portions as you want for meals, hand stretch or roll into 10-inch oval plate or pan. Spread sauce and stuffing's over half the dough leaving a ½ inch border. Moisten edges and fold over, and seal with a fork, Brush with olive oil and bake at 500 degrees for 15 minutes (You can poke in steam vents.)

Sauce: spaghetti sauce, mozzarella cheese, Parmesan cheese. OPTIONAL, Sautéed mushrooms, onions, black olives, etc. may be added.
